The story of Domaine Pierrick Bouley dates back to the 1970s when Pierrick's father, Gilles Bouley, started acquiring vineyards in Pommard. Gilles was passionate about winemaking and had a deep respect for the terroir of Burgundy. He passed on his love for the vineyards and winemaking to his son, Pierrick, who took over the domaine in 2015 after working alongside his father for several years.
Pierrick inherited his father's philosophy of focusing on the vineyards and respecting the terroir. He took over almost 10 hectares of vineyards in Pommard, divided into over 40 parcels, and has been working tirelessly to improve the viticulture practices. He uses high canopies to provide more shade for the grapes, which helps to maintain their acidity and freshness. In several parcels, he practices "tressage," where the vines are rolled over rather than hedged, allowing the shoots to receive more sunlight and reducing the need for pesticides.
Pierrick also experiments with permaculture, mowing the grass between the rows and cultivating only under the vines when necessary. This approach helps to improve the soil health and biodiversity, leading to healthier and more resilient vines.
In the winery, Pierrick follows a non-interventionist approach, allowing the fruit to express its natural flavors and aromas. He destems the grapes entirely and favors daily pump-overs over punch-downs for a maximum of two times per cuvée. This approach helps to extract the desired flavors and tannins without over-extraction, resulting in wines that are elegant and balanced.
Pierrick's wines are aged in barrels from a variety of coopers, including Val de Loire, Taransaud, Ermitage, François Frères, and Eclat, with 10% to 25% of the barrels being new. After one year in barrel, the wine is racked to tank, where it rests for one to three months before bottling, using a shared line with other high-quality producers in the village.
