Domaine Hubert Lamy, a name synonymous with Burgundy's winemaking heritage, was established in 1973 by Hubert Lamy. The Lamy family, however, has been intricately involved in viticulture in the region since as far back as 1640, illustrating a deep-rooted connection to the land and the art of wine.

The legacy of the Domaine took a significant turn in 1995 when Olivier Lamy, armed with ambition and innovative ideas, joined his father. His arrival marked the beginning of a transformative era for the estate. In a decisive move two years later, Olivier ceased selling grapes to négociants. He undertook the meticulous process of grubbing up less desirable vine plots, focusing solely on cultivating the most venerable and superior sites. This strategic refinement of their vineyards was a bold step towards quality over quantity.

Olivier Lamy’s impact has been profound. Within just two decades, he has not only maintained the esteemed legacy of his family but has also emerged as a leading figure among his contemporaries. He epitomizes the modern Burgundian grower who skillfully balances reverence for tradition with a progressive approach to viticulture and winemaking.

Nestled in Saint-Aubin, a village strategically positioned between the renowned Puligny-Montrachet and Chassagne-Montrachet, Domaine Hubert Lamy extends over 18.5 hectares. The estate's vineyards predominantly lie within Saint-Aubin, but Olivier also meticulously tends to parcels in Chassagne-Montrachet, Puligny-Montrachet, and Santenay. Notably, the domaine includes a prized small plot in the prestigious Grand Cru Criots-Bâtard-Montrachet.

Olivier Lamy's winemaking prowess is particularly evident in his Haute Densité cuvées. These cuvées, cultivated from vines planted at unusually high densities, yield wines of remarkable concentration and complexity. Alongside these, the domaine's reds stand out for their exquisite quality. Each wine produced under Olivier's watchful eye is a testament to the philosophy that meticulous viticulture coupled with thoughtful winemaking can yield exceptional wines, irrespective of their origin.

In the Vineyard

Olivier Lamy practices lutte raisonnée in all of his vineyards, adhering to organic practices and treating only when necessary.

In a quest to capture a true expression of each one of his terroirs, Olivier works intensively in the vineyard all year long and his meticulous and thoughtful viticulture is a source of inspiration for other winegrowers up and down the Côte.

Inspired by his old practices, Olivier Lamy started experimenting with high-density plantings in the early 2000s. He first implemented this method in the top part of his holdings in the Saint-Aubin 1er Cru Derrière Chez Edouard where he planted 28,000 and later 30,000 vines per hectare.  

High-density planting, short and late pruning, and rolling canopies are used to limit the yields and reach perfect levels of maturity before each harvest.

In the Cellar

Olivier's winemaking style and preference are to emphasize the fresh and mineral side of his wines.

For the white wines, all grapes are immediately pressed using a pneumatic press; the juice is then settled before going into cask.

Olivier Lamy was one of the first winemakers in Côte de Beaune to use larger size barrels to reduce the influence of oak and retain freshness; he now mostly uses 350 and 600 liters barrels. He has also reduced the use of new oak on his whites over the years, and now uses barrels ranging in age from one to five years old.

The whites are fermented in a different cellar to the reds, enabling Olivier to reduce temperatures to prolong the white fermentation over 90 days, thus crafting more complex aromas and flavors in the wines. The wines are then racked the following August and bottled after 12 to 18 months in barrel, depending on the vintage and cuvée.

The red wines are 100% de-stemmed and macerated before fermentation. The wines are raised in barrels and typically bottled after 12 to 18 months of aging.  

Perfectionist, Olivier has also conducted extensive experimenting with closures. He experimented with varying diameters and lengths of cork, different treatments, as well as testing plastic, agglomerate, and technical corks before concluding that longer, technical DIAMs, under wax seal produce the best results.

Criots-Bâtard-Montrachet Grand Cru

This Criots-Bâtard-Montrachet Grand Cru comes from a tiny 0.05-hectare plot located just above the vines of Leroy’s Domaine d’Auvenay. Vines here were planted in 1975.

Les Macherelles

Les Macherelles is located at the northwest border of the village of Chassagne-Montrachet. This cuvée comes from a small 0.16-hectare plot mid-slope facing east. The vines here were planted in 1988 on shallow clay-limestone soil.

Les Chaumées

This Chassagne-Montrachet 1er Cru comes from 0,23 hectares of vines in the Climat of Les Chaumées, at the border with Saint-Aubin at the entrance to the valley. Vines here were planted between 1989 and 1970 on shallow clay-limestone soil.

This Chassagne-Montrachet Rouge comes from 1,05 hectares of Pinot Noir. Oliver Lamy’s holding lays on the northeastern side of this vineyard. Vines here were planted in 1950 on clay soil.

La Concis du Champ

The vineyard of Le Concis du Champs lays southeast of the village of Chassagne-Montrachet. This cuvée comes from 0,92 hectares of vines planted in 2005 on deep clay soil.

Clos de la Chatenière

Clos de la Chatenière is a monopole of the Domaine. Covering 1.25 hectares the south-facing parcel is surrounded by a wall. Vines here were planted in 1964.

Clos de Meix

Clos du Meix is another monopole of the Domaine located on the southern side of the village of Saint-Aubin at the bottom of the hill, across the road below the vineyard of Les Castets. The 0.7-hectare clos, walled parcel, was planted between 1985 and 1995.

Derrière chez Édouard Haute Densité

This special cuvée of Derrière chez Edouard comes from a tiny 0.10-hectare plot that was planted in 2004 at the high density of 28,000 vines per hectare. This plot is on the higher part of the slop, facing east, and has rocky limestone soil.

This Saint-Aubin 1er Cru comes from a 1,68-hectare plot in the climat of Derrière chez Edouard. Planted in 2000 the vines are located on the mid to lower part of the southeast-facing slope on soil with more limestone.

Olivier Lamy farms 0,95 hectares of Pinot Noir in the climat of Derrière chez Édouard. The Pinot Noir vines are planted from the middle to the lower part of the hill. The soil becomes deeper with less limestone as the vineyard reaches the bottom of the slope. Vines here were planted in 1960.

Les Frionnes

The climat of Les Frionnes is northeast of the village of Saint-Aubin, right behind Olivier’s winery. His 2.40 hectares of vines are planted on the lower part of the southeast-facing slope on limestone soils. Vines here were planted in 1935, 1960, and 1985.

This Saint-Aubin 1er Cru comes from 0.25 hectares of vines ideally located in the vineyard of Les Murgers des Dents de Chiens. Vines here were planted in 1985.

En Remilly is a beautiful vineyard located right next to the Chevalier Montrachet and Montrachet Grand Crus on the Montrachet hillside. Oliver Lamy farms 2 hectares of vines here that were planted in 1989.

This Saint-Aubin village is a blend of 10 different parcels across the appellation totaling 3 hectares of vines. Vines on these plots were planted in 1985 and 2000.

This special cuvée of Les Tremblots comes from a tiny 0.10-hectare plot planted at the high density of 30,000 vines per hectare.

This Puligny-Montrachet village comes from a small 0,90-hectare plot at the southern border of the appellation with Chassagne-Montrachet. Vines here were planted in 1946 and 1970 on deeper clay-limestone soil.

Clos des Hâtes is in the very heart of the appellation of Santenay, surrounded by 1er Cru vineyards. Oliver Lamy owns 0,67 hectares of Pinot Noir here. The vines were planted in 2000 on deep clay-limestone topsoil.

This Santenay Village comes from a small 0,38-hectare plot. Facing east, the vines here are planted on a steep slope on shallow marl soil. Vines were planted in 2011 and 1966.

This Bourgogne Chardonnay comes from 1.1 hectares of vines and is a blend of 4 different parcels in Saint-Aubin. Planted in 1990, these parcels are in cooler areas and are usually always the last to be harvested.
