DOMAINE COTTENCEAU

Buxy

Domaine Maxime Cotteanceau was founded in 2018 by Maxime Cotteanceau in the small village of Buxy, just south of Givry in the Côte Chalonnaise.

Historically, the wines made in the village of Buxy were a favorite of the Cluny monks and is today the heart and capital of the Montagny appellation. The southeast facing slopes of limestone and clay in this area has always been renowned for its Chardonnay, which is the only allowed variety.

Maxime Cottenceau has deep roots in the village, where his family has been growing vines for generations. Maxime studied viticulture and enology while working along side Vincent Dureuil of Domaine Dureuil-Janthial in Rully.

When taking over the family vines in 2018, Maxime decided against continuing the family’s tradition of selling off their grapes and started bottling the wines made from 2.8 hectares of his family finest plots.

Today Maxime farms close to 4 hectares of vines. Under Vincent Dureuil’s ongoing friendship and guidance, this rising star creates white Burgundies of scintillating tension and clear terroir expression.

In the Vineyard

Maxime is committed to gaining organic certification. He wants to bring life back in the soil and biodiversity into the plots.

The young winegrower has already implemented practices worthy of the great estates of the Côte d’Or.

Harvest is done manually and grapes are brought back to the cellar in small crates.

In the Cellar

In the cellar, Maxime Cottenceau follows a low-intervention philosophy, and like in the vineyard all his actions are carried out according to the lunar calendar.

The grapes are rigorously sorted upon arrival to the cellar. The grapes are then slowly pressed for over 3 hours.

The wines are aged in 228-liter barrels with very little added sulfur. The aging in barrels lasts between 18 and 20 months, including 6 months in tanks prior to bottling.
