The Guilbert Gillet Domaine was created by Benjamin Guilbert and his wife Caroline in 2020 in Savigny Les Beaune. The estate is located in a small house hidden between the national road and the vineyards, with a winery underneath the house. It is a tiny estate as only Benjamin and his wife Caroline manage it and have been working tirelessly since the 2020s to create an extraordinary domaine. Thanks to an investor, Mr. Guilbert, this project was made possible, considering that creating a domaine in Burgundy is almost impossible currently for people with modest means, due to the ever-increasing value of land.

The family-owned winery operates 3.6 hectares of vineyards, including 0.5 hectares of white, situated in the heart of Savigny and Chorey (only one vineyard). The wines are a true reflection of the unique terroir of the appellation, and they take great pride in producing some of the finest wines in the area, including 1er Cru Rouvrettes, and 1er Cru Les Peuillets.

They are committed to sustainable and organic farming practices, ensuring that their vines remain healthy and strong, producing the highest quality grapes possible. Our 70 ares of vines in échalas are tended to with the utmost care and attention, worked by hand and horse-drawn plows to produce their first cuvée of Savigny "échalas" in 2022, as well as aligoté and Savigny 1er cru les Rouvrettes.

At Domaine Guilbert Gillet, they believe that every parcel of vines is unique and should be treated as such. That's why they work each of their 12 vineyard plots differently, based on their growth and terroir, to produce wines that are truly one-of-a-kind.

From the pruning and harvesting of the grapes to the aging and bottling of the wines, every step of the process is done with the utmost care and attention, ensuring that their wines are of the highest quality and truly reflect the spirit of Burgundy.

During the harvest, 3 selections are made: one in the vineyard and 2 in the winery using 2 sorting tables.
Red grapes are 100% destemmed and subjected to a long maceration and long traditionnal pressing.
The wines are aged for 18 months in barrels without racking and then bottled using gravity during a favorable lunar phase.

Thanks to Benjamin Guilbert's extensive connections established over the years with Domaine Gonon, Louis Michel Liger Belair, and others, he has amassed a wealth of knowledge and expertise, which has culminated in the creation of some truly exceptional and authentic wines that are sure to challenge people's perceptions of these appellations.
